Our flours are grown & milled on the farm
We produce a variety of different flours here at Maple Farm Kelsale. Made from organic wheat, organic spelt or organic rye, each are suitable for traditional baking, but do vary from mass-produced flours. They may not be as strong as imported varieties because of the lower protein levels of the English wheat varieties we grow, but they are considered to have a significantly fuller flavour. They make delicious pastry and bread.

A note on Spelt
We are now home-milling our organic spelt crop. Spelt is an ancient grain which is winning renewed popularity. It is naturally high in fibre and contains significantly more protein than wheat. Spelt flour is not gluten-free, but it is known to be digestible by some people with wheat allergies.
A note on Grains
We believe that many of Britian’s most important varieties of grain are being lost for future generations. Old varieties often taste better, contain more nutrients and are more genetically resilient but they just haven’t suited modern farming with all of its artificial chemical inputs. We are growing more of these old varieties and developing our own populations or landraces to suit our farm and its soils. We sell them and their products in our store but do ask if you are interested in learning more about this important subject.
We use locally grown crops
We always think it a bit of a surprise that buying locally grown and locally milled flour can be a challenge – even in Suffolk where farmers grow over a quarter of a million acres of wheat every year. Unfortunately, most of the grain disappears down farm drives in big lorries, never to be heard of again. Maple Farm Kelsale flours are milled in Suffolk from crops harvested in Suffolk.
Keeping the milling tradition alive
It’s a sad fact that all but a few of Suffolk’s small mills are now in ruins. So we took things into our own hands. After a lengthy search, we found a small family firm which still makes fine traditional stone mills… in Austria. The rest is just continuing our local history.
Stone mills run at slow speeds so the flour does not overheat and few of the essential nutrients are lost. Our flours are fresh. They contain no preservatives and do not undergo any bleaching processes.
