Cabbage braised with wine and pancetta ( or sun-dried tomatoes) Medium organic cabbage (Savoy / tundra), shredded. 2 small organic onions or 3 organic shallots, finely chopped 2 tblsp olive oil A few handfuls of pancetta or sun-dried tomatoes … or a mix of both (why not?!) 1 large glass white wine Salt & pepper Fry chopped pancetta / sun-dried tomatoes in the oil for 2 minutes in a good sized pan, then add the onions/shallots and cook for a further 3-4 minutes. Toss the cabbage into the pan and cook for about 3 minutes, stirring well. Add the wine and season to taste then cover and cook for about 10 minutes until the cabbage is sweet, juicy and tender, but not soft. Serve immediately.
