Recipe: Upside-down apple cake

Upside-Down Apple Cake - a great autumn pudding !

o 2 tbsp jam or fruit jelly ( bramble / blackberry / blackcurrant) – sieved if appropriate
o 3 large organic apples - cored & sliced
o 100g self-raising flour
o ½ tsp baking powder
o 100g caster sugar
o ½ tsp mixed spice
o ½ tsp cinnamon
o 60g softened butter
o 1 large organic egg – beaten.

Preheat the oven to 180C/ 350F/Gas 4. Grease and fully line a 20 cm (8 inch) cake tin (preferably one with a loose base).
Add a teaspoon or two of boiling water to the jam to soften and loosen so that it can be spread easily. Put into the bottom of the baking tin and spread over the baking parchment lining the bottom. Lay the apple slices neatly on top of the jam, in a concentric circle pattern, and gradually layer the rest of the apple slices on top.
Sift the flour, baking powder, sugar and spices into a bowl and mix the egg and butter in thoroughly. Spread the mixture carefully over the apples trying not to dislodge the arrangement!
Bake for 45 – 50 minutes until very golden and firm to the touch. Cool in the tin – turn out only when at room temperature or just still warm.
Serve with cream, rich vanilla ice-cream or a delicious traditional milk custard.
