Roots ā€˜nā€™ all ā€“ vegetable stew with dead-easy cheesey dumplings

3 organic carrots & 1 small organic swede (peeled and diced), 2 organic parsnips & 1 organic onion (peeled & cut into wedges), 5 whole cloves organic garlic ( leave skin on), 200g organic mushrooms (quartered), 2 tbsp olive oil, 1 tbsp organic flour, 400ml vegetable stock
For the dumplings : 200g Maple Farm organic white flour, 100g strong cheddar cheese ( grated), 1 tbsp fresh mixed herbs (chopped), 100ml organic milk, 1tsp salt, 1 rounded tsp baking powder, 1 tbsp olive oil

Put the olive oil and all the organic vegetables except the mushrooms in a bowl and stir until all have a light covering of the oil. Turn out onto a baking tray and oven roast for about 30 mins ( 200C/400F/gas 6). When the vegetables and soft and golden transfer to a casserole dish and cover with the stock. Bake in the oven for another 30 mins reducing the heat to 180C/350F/gas 4.
Fry the mushrooms on a high heat in a little oil then sprinkle with flour and add about 100ml of the liquid stolen from the casserole. Stir until thickened, then add the mushrooms mixture back into the casserole and continue to bake.
To make the dumplings simply put all the ingredients in the food processor and blitz until they are combined. Flour your hands and shape the mixture into 8 balls. Add the dumplings to the casserole and cook for a further 15 mins.
Serve with hot potatoes in their jackets dotted with butter, or perhaps a little more cheese.
